Basil Pesto

  • 2 cups loosely packed basil leaves
  • 1/3 cup pine nuts
  • 1 1/2 medium cloves of peeled garlic (or more)
  • 1/2 cup grated parmesan cheese


  1. Place all ingredients in food processor. Start processor on slow; as it is running pour 1/2 cup olive oil in through the feed tube
  2. If sauce seems dry (it should be a paste) add more oil
  3. Season with salt and pepper to taste
  4. Use immediately or store in covered glass jar for up to 1 week
  5. You can put two tablespoons into muffin tins, freeze, then take out, wrap well and use it all winter long
